Our Signature Dorset Hard Cheese
The cheese is sealed with local rapeseed oil when its first made and then left to develop a natural mould rind.
The cheese is aged to around 9 months giving a nutty sweetness.
This is the only cheese that we press for around 18hrs.
It is turned daily for the first month and then weekly for the remainder of its maturing
Humidity is kept at 85% and temperature of 11c
